All Forgotten Flavours Pastas are made using our Wild Yeast cultures and undergoing a 48hr Long Fermentation process prior to drying. It is a combination of these ``Methods and Ingredients`` that help break down harmful enzymes and proteins (gluten) that often trigger our bodies' defences, making our pasta safe and easier for most people to eat and enjoy.
